Thessaloniki 2018-25 

Heritage Property Revitalization

Épavli Marokkou is housed in one of Thessaloniki’s most historic neoclassical buildings: a protected monument, filled with design limitations and architectural significance.
What started as an empty shell became, under our full direction, one of the city’s most recognizable all-day destinations — a hybrid of café, bar, and restaurant that shaped its neighborhood.

We did everything. From concept and naming to menu engineering, staffing, logistics, daily management, financial oversight, and long-term strategy — for eight consecutive years.

What we did:
• Brand creation & storytelling
• Design coordination within the restrictions of a listed building
• F&B concept development (menu, bar, wine list, pairings)
• Hiring, structuring & managing teams across all departments
• Daily operations, shift models, supplier networks
• Marketing & positioning in a saturated urban market
• Budget planning, procurement, cost control & reporting
• Event planning, seasonal adaptation, growth strategy

Remvi Santorini

Santorini 2023-25
Restaurant, Suites & Brand Strategy

Remvi is a landmark hospitality property in Santorini, combining a high-traffic caldera-view restaurant with boutique suites above.
ÉLEVÉ was brought in not only to redesign the menu — but to rethink the entire hospitality experience and support the business across all levels of operation.

What we did:
• Restructured the à la carte menu with Mediterranean clarity & operational efficiency
• Refined the visual and verbal identity of the brand
• Supported the business in strategic decisions affecting both the restaurant and the suites
• Created and implemented marketing and communication strategies (social media, visuals, tone)
• Consulted on service standards across restaurant, suites, and reception
• Guided key improvements in space use, staffing, and guest communication
• Recruited and trained staff for all departments — kitchen, floor, and front desk

Outcome: A fully repositioned, better-functioning hospitality business — with aligned identity, improved product, and smoother internal systems.

Open House Thessaloniki 

Annual Closing Event 2019/22/24

Thessaloniki, Greece – Cultural Hospitality Activation

Open House Thessaloniki is one of the city’s most important cultural institutions — a multi-day event that opens the doors to iconic buildings, archaeological spaces, infrastructure projects, and architectural landmarks not usually accessible to the public.

Each year, following the tours and citywide happenings, a major closing event is held — a celebration for volunteers, organizers, architects, and friends of the action. More than just a party, it is a massive gathering that combines music, conversation, and community.

ÉLEVÉ was responsible for the design and coordination of this final moment for five consecutive editions — from overall concept to logistics and guest flow.

What we did:
• Event concept & thematic direction
• Venue layout, guest flow & spatial coordination
• Logistics for high-volume attendance (350+ volunteers & guests)
• Music programming, ambiance design & experience cues
• Coordination with the Open House core team
• Ensuring a smooth, safe, and elevated closing moment

Outcome: A multi-year collaboration with one of Thessaloniki’s most iconic institutions — balancing cultural significance with joyful execution.

Vanoro 5* Hotel

Breakfast Redesign

Thessaloniki, 2025

One of the core offerings of Vanoro Hotel is its rare all-day breakfast service — a premium benefit not commonly found in five-star properties.
That made the challenge even greater: how do you upgrade something that already sets the bar high, without compromising its uniqueness or flexibility?

We were tasked with reimagining and optimizing the entire breakfast experience — not just as a meal, but as a service model that works from early morning to late afternoon.

What we did:
• Designed a new DIY platter-based format, replacing the à la carte chaos with guided freedom
• Developed a unified presentation system to reduce table clutter and improve aesthetics
• Reworked staffing structure and production flow for better efficiency
• Conducted cost analysis and reduced average cost per guest — with increased perceived value
• Integrated energy & utility optimization without affecting quality
• Maintained full guest flexibility: the new system works just as well at 8:00 as it does at 14:00

Outcome: A refined, elegant, and fully scalable breakfast experience that respects the original promise — but delivers it smarter.

ANZA menu

Thessaloniki Sweets collection 2025

This project is where heritage met innovation — and where a dessert menu became a cultural moment.

At ÉLEVÉ, we don’t just create menus. We design experiences with narrative, connection, and intention. For this project, we decided to reinterpret the sweetest stories of Thessaloniki — not in theory, but in real collaboration with the pastry legends who shaped them.

We personally reached out to iconic brands like Terkenlis and Konstantinidis — two of Greece’s most recognized names in patisserie, whose operations span decades and scale into the hundreds of millions.
We listened. We asked what they considered essential. We honored the essence — and then reimagined the classics through a contemporary lens.

What we did:
• Reinterpreted five emblematic desserts through modern technique and storytelling
• Built a dessert menu that reads like a tribute — not a copy
• Created an original tasting experience rooted in real conversations with iconic figures of the industry
• Positioned the restaurant not just as a food venue, but as a cultural storyteller

Outcome: A one-of-a-kind dessert menu that blends deep research, bold creativity, and real relationships — a celebration of Thessaloniki through five sweet stories.
